What’s in the Honey?

Our raw sunflower honey has above 40% sunflower pollen. The honey created by bees which have primarily collected the nectar from sunflower fields, is defined by its:
- High level of glucose and fructose, low glucose/fructose ratio & low level of sucrose. (because of this composition it crystallises quickly, sometimes in as few as 20 days.)
- A beautiful amber colour, bright, yellowish colour of a medium intensity. Light yellow to dark yellow golden.
A medium sweetness, not particularly floral. Our honey is subtly sweet with gentle note of lemony acidity on the finish. Often described as fresh on the palette. The perfect breakfast honey- great on toast, yoghurt or even porridge. Otherwise try with poached pears, roasted plums or peaches… perfect pairing with cheeses mild to medium.
