Those who understand honey know that the flavour and characteristics of the honey depend on which plants and flora the bees have visited. Honey created from certain plant nectars often take on certain characteristics which reflect their origin. Some will be sweet and simple, while others give a far more complex flavour. It can also determine the nutrient content of the honey, its texture, colour, and how quickly it crystallises.

Well, there’s a reason for this. Raw sunflower honey is one of the fastest types of honey to crystallise. It does this within a short period, forming a firm, fondant-like texture composed of fine crystals with a refreshing taste.

 

This means that raw sunflower honey is very difficult, labour intensive, and time-consuming to pour into consumer packaging. Which is why some of the purest and best sunflower honeys are also some of the most expensive.

 

Sunflower honeys wildfire colour brings alive the mystery of our bees in our jars, the colour reflects the beginning of Spring. In taste just like acacia honey with medium taste intensity. It has a sweet aromatic taste with creamy smooth textures. It tastes best with whole grain bread or rye bread.

 

In regards to flavour, texture and content, it is widely agreed amongst those who have tried it to be one of the finest. It has a very pleasant flavour and enjoyable aroma, it reminiscent of the Sunflower blossom.

 

 

What’s in the Honey?

Just honey – Obviously!

Our raw sunflower honey has above 40% sunflower pollen.  The honey created by bees which have primarily collected the nectar from sunflower fields, is defined by its:

  • High level of glucose and fructose, low glucose/fructose ratio & low level of sucrose. (because of this composition it crystallises quickly, sometimes in as few as 20 days.)
  • A beautiful amber colour, bright, yellowish colour of a medium intensity. Light yellow to dark yellow golden.

 

 

A medium sweetness, not particularly floral. Our honey is subtly sweet with gentle note of lemony acidity on the finish. Often described as fresh on the palette. The perfect breakfast honey- great on toast, yoghurt or even porridge. Otherwise try with poached pears, roasted plums or peaches… perfect pairing with cheeses mild to medium.

 

The Benefits of Sunflower Honey

Sunflower honey is recognised the world over for its high anti-oxidant properties which has been used for generations as a natural treatment to protect against all kinds of cold and flu, stomach and intestinal problems, pulmonary illnesses and renal infections.

Our sunflower honey can contain up to 45% pollen. Bee pollen is a ball of pollen made by young bees when they land on a flower. It’s a mixture of pollen, saliva, and nectar or honey. Bees carry these balls back to the hive in sacs on their legs and store them in the hive’s honeycomb. The pollen then ferments into “bee bread,” which feeds a bee colony. This pollen is said to contain the superfood that makes up our honey it works hard to help relieve inflammation, work as an antioxidant, boost liver health, strengthen the immune system, work as a dietary supplement, ease symptoms of menopause, reduce stress and even speed up healing.
